| Honey-Vinegar-Soy-Garlic Marinade for Geese Combine 1/2 C. each honey, white wine vinegar and soy sauce together with4 finely minced cloves garlic (or 1tsp. powdered), 1 Tbl freshly ground ginger and 1/2 tsp thumb-in-palm-ground tarragon. Clean 1 goose and cut into serving pcs. (about 2x the average bite size is what I found works best and saves prep time) Marinate overnight Remove from marinade and sprinkle with salt and fresh ground peppercorns. Brown in hot skillet containing 6 Tbl. cooking oil and 1/3 stick of butter-about 10 mins. Remover from skillet as pieces brown and place in baking platter Baste each with marinade Broil 6 inches under flame or coil until pieces bubble and darken-about 10 mins. Turn and baste other side and broil another 10 mins Garnish with parsley |
| Roast Duck (Stolen From Rick Shatzer)!! 1 Duck, Any kind! Skinned, and cut down the back. 1 Table Spoon Honey 1 Table spoon Worcestershire Sauce Bacon Lay Duck Breast side up and cover with Bacon, pour honey and Worcestershire Sauce on top of Bacon. Heat oven to 400 and bake for about 40 minutes or until Duck is Med Rare To med, Serve with Wild rice and a good bottle of wine or a good Beer! Enjoy!!! Woody |
| BBQ Goose Breast (this will only work right on Charcoal) You will need to combine these ingredients in a Med size Bowl! 1/8 cup salt 2 tsp Poultry Seasoning 1/2 tsp onion salt or powder 1/2 tsp Garlic salt or powder 1/2 tsp accent 2 Cups Vinegar 1&1/2 cups water 1 cup oil (olive,vegetable will work) 2 eggs Blend all of above well!!!!!! 2 Goose Breasts skinned and cleaned of all fat! lay goose breast on grill and cook both sides for about 5 minutes, then you MUST Splash the BBQ sauce on to the Breasts and turn them every 2 minutes! Cook until done to personal taste! Enjoy with wild rice, mixed Veggies and A very good Beer ( I perfer Foster's With this one!!!) Enjoy Woody You do not have to use Rice, it is just what is normally used as a side dish! Use any kind of Veggies that you wish, I have Found Broccoli and candied carrots go great as well!
